Instructions

  1. Cook the chopped bacon in a large pot over medium heat until crisp. Transfer to a paper towel-lined plate, leaving about 1 tablespoon of drippings in the pot.
  2. Add the ground beef and cook, breaking it up with a spoon, until browned, about 6–7 minutes. Drain excess fat if needed.
  3. Add the onion, carrots, bell pepper, and celery. Cook for 5 minutes, until the vegetables begin to soften. Stir in the garlic and cook for 30 seconds.
  4. Sprinkle the flour over the mixture and cook, stirring constantly, for 1 minute.
  5. Gradually whisk in the broth. Add the potatoes, Worcestershire sauce, smoked paprika, and black pepper. Bring to a gentle simmer.
  6. Cover and cook for 12–15 minutes, until the potatoes are tender.
  7. Reduce the heat to low. Stir in the milk and cheddar a handful at a time, until the cheese is melted and the soup is creamy. Do not boil after adding the cheese.
