These 1-Point Peanut Butter Cookies are the kind of recipe you make once… and then never stop making. Soft in the center, lightly crisp on the edges, and packed with classic peanut butter flavor, they’re the perfect WW-friendly treat when a craving hits.

No fancy ingredients, no chilling, no mixer required — just simple, comforting cookies you can enjoy any day of the week. They’re especially perfect with coffee, as an afternoon snack, or tucked into your bag for a sweet bite on the go.


📝 Ingredients

(Makes about 18 cookies)

  • ½ cup powdered peanut butter (PB2 or similar)
  • ½ cup granulated sugar substitute (Stevia, Monk Fruit, Splenda)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1–2 tbsp water (as needed for dough texture)

👩‍🍳 Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix ingredients in a bowl: powdered peanut butter, sweetener, egg, vanilla, and water. Stir until a soft dough forms.
