Ingredients

For the Soup:

  • 1 lb cooked chicken breast, shredded or diced
  • 1 medium onion, diced
  • 2 cups frozen mixed vegetables (peas, carrots, corn, green beans)
  • 2 medium potatoes, diced (optional but delicious!)
  • 4 cups low-sodium chicken broth
  • 1 cup unsweetened almond milk or low-fat milk
  • 1 can 98% fat-free cream of chicken soup
  • 1 tbsp corn starch (mixed with 2 tbsp water)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • Salt & pepper to taste
  • Cooking spray

Optional (but amazing!):

  • Fresh parsley
  • 2-ingredient WW biscuits (serve on the side)

👩‍🍳 Instructions

1. Sauté the aromatics

Spray a large pot with cooking spray. Add diced onions and cook for 3–4 minutes until soft and fragrant.

2. Add veggies & broth

Add mixed vegetables, potatoes, and chicken broth. Bring to a gentle boil and cook until potatoes are soft (about 10–12 minutes).

3. Make it creamy

Stir in the cream of chicken soup, almond milk, garlic powder, onion powder, thyme, salt, and pepper.

4. Thicken the soup

Whisk the cornstarch slurry (cornstarch + water), then stir it into the pot. Simmer for 5–7 minutes until thickened.

5. Add chicken

Stir in the cooked chicken and simmer for another 5 minutes for everything to blend beautifully.

6. Serve warm

Top with fresh parsley and pair with WW-friendly biscuits if desired. Pure comfort!
