- 6 cups vegetable broth (fat-free preferred)
- 1–2 cloves garlic, minced
Optional Seasonings (Highly Recommended!)
- Salt & black pepper, to taste
- ½ tsp paprika
- ½ tsp Italian seasoning
- Pinch of red pepper flakes (optional heat)
- Fresh parsley for garnish
🍲 Instructions
- Sauté for flavor (optional but recommended)
In a large soup pot, lightly spray with cooking spray. Add onion, carrots, celery, and garlic. Sauté over medium heat for 3–4 minutes until fragrant. - Add the veggies
Stir in bell peppers and cabbage. Cook 2–3 minutes to slightly soften. - Pour & simmer
Add diced tomatoes and vegetable broth. Bring to a boil, then reduce heat to low. - Season & cook
Add seasonings. Cover and simmer for 25–30 minutes, or until vegetables are tender. - Serve & enjoy
Taste and adjust seasoning. Garnish with parsley if desired.
