📝 Ingredients

Salad

  • 1 lb 96% lean ground beef
  • Salt & pepper, to taste
  • 6 cups shredded iceberg or romaine lettuce
  • 1 cup cherry tomatoes, halved
  • ½ cup red onion, diced
  • ½ cup dill pickle slices
  • ½ cup fat-free shredded cheddar (or reduced-fat)

WW Special Sauce

  • ½ cup fat-free Greek yogurt
  • 2 tbsp light mayonnaise
  • 2 tbsp sugar-free ketchup
  • 1 tbsp yellow mustard
  • 2 tbsp pickle juice
  • ½ tsp paprika
  • Salt & pepper, to taste

👩‍🍳 Instructions

  1. Cook the beef:
    Brown ground beef in a skillet over medium heat. Season lightly with salt and pepper. Drain excess fat and set aside.
  2. Make the sauce:
    In a small bowl, whisk together all sauce ingredients until smooth and creamy. Chill for 10 minutes for best flavor.
  3. Assemble the salad:
    Add lettuce to a large bowl. Top with beef, tomatoes, red onion, pickles, and cheese.
  4. Drizzle & serve:
    Spoon or drizzle the special sauce over the salad. Toss lightly or enjoy layered.
