This classic Thai-inspired noodle dish gets a plant-based twist! Stir-fried rice noodles, crispy tofu, and a bold, tangy-sweet sauce come together in this super flavorful, comforting bowl.
🌿 Ingredients:
For the Pad Thai:
- 8 oz rice noodles
- 1 tbsp oil (avocado or sesame)
- 1 block extra-firm tofu, pressed and cubed
- 1 small onion, sliced
- 2 cloves garlic, minced
- 1 small carrot, julienned (optional)
- 2 green onions, chopped
- Fresh cilantro and crushed peanuts for garnish
For the Sauce:
- 3 tbsp soy sauce or tamari
- 2 tbsp lime juice
- 1 ½ tbsp maple syrup or brown sugar
- 1 tbsp rice vinegar
- 1 tbsp peanut butter (optional for creaminess)
- 1 tsp sriracha or chili flakes (adjust for heat)
👩🍳 Directions:
- Prepare noodles according to package directions. Drain and set aside.
- In a skillet, heat oil and pan-fry tofu cubes until golden and crispy on all sides. Remove and set aside.
- In the same pan, sauté onion and garlic until fragrant. Add carrot (if using) and cook 2–3 minutes.
- Add noodles and pour in the Pad Thai sauce. Toss until evenly coated.
- Stir in tofu and green onions. Cook 1–2 minutes to combine flavors.
- Serve hot, garnished with crushed peanuts, cilantro, and a squeeze of lime.
