This classic Thai-inspired noodle dish gets a plant-based twist! Stir-fried rice noodles, crispy tofu, and a bold, tangy-sweet sauce come together in this super flavorful, comforting bowl.


🌿 Ingredients:

For the Pad Thai:

  • 8 oz rice noodles
  • 1 tbsp oil (avocado or sesame)
  • 1 block extra-firm tofu, pressed and cubed
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1 small carrot, julienned (optional)
  • 2 green onions, chopped
  • Fresh cilantro and crushed peanuts for garnish

For the Sauce:

  • 3 tbsp soy sauce or tamari
  • 2 tbsp lime juice
  • 1 ½ tbsp maple syrup or brown sugar
  • 1 tbsp rice vinegar
  • 1 tbsp peanut butter (optional for creaminess)
  • 1 tsp sriracha or chili flakes (adjust for heat)

👩‍🍳 Directions:

  1. Prepare noodles according to package directions. Drain and set aside.
  2. In a skillet, heat oil and pan-fry tofu cubes until golden and crispy on all sides. Remove and set aside.
  3. In the same pan, sauté onion and garlic until fragrant. Add carrot (if using) and cook 2–3 minutes.
  4. Add noodles and pour in the Pad Thai sauce. Toss until evenly coated.
  5. Stir in tofu and green onions. Cook 1–2 minutes to combine flavors.
  6. Serve hot, garnished with crushed peanuts, cilantro, and a squeeze of lime.
