Vegan Spinach & Tofu Breakfast Bake

🛒 Ingredients

  • 1 block (14 oz) firm tofu, drained and crumbled
  • 1 tbsp olive oil
  • 1 small onion, diced

  • 2 tbsp nutritional yeast
  • 1 tbsp soy sauce or tamari

  • ¼ cup vegan cheese
  • ½ tsp Italian seasoning

1️⃣ Preheat the Oven

Preheat oven to 375°F (190°C).
Grease a small baking dish or pie dish.

Heat olive oil in a skillet over medium heat.

Sauté:

  • onion
  • garlic
  • bell pepper

Cook for 3–4 minutes.
