Crust

  • 1 ¼ cups all-purpose flour (or gluten-free blend)

Filling

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups fresh spinach, chopped
  • 14 oz (1 block) firm tofu, drained
  • ½ cup raw cashews (soaked in hot water for 15 minutes)
  • ¼ cup unsweetened plant milk
  • 3 tbsp nutritional yeast
  • 1 tbsp lemon juice
  • 1 tsp dijon mustard
  • ½ tsp black salt (kala namak) – for that “eggy” flavor
  • ½ tsp turmeric
  • Salt & pepper, to taste

👩‍🍳 Instructions

  1. Make the crust:
    Combine flour and salt, then cut in the vegan butter until crumbly. Add cold water until dough forms. Roll out and press into a pie dish. Chill for 10 minutes, then pre-bake at 375°F (190°C) for 10 minutes.
  2. Cook the veggies:
    Sauté onion and garlic in olive oil until fragrant. Add spinach and cook until wilted. Set aside.
  3. Blend the filling:
    In a blender, combine tofu, soaked cashews, plant milk, lemon juice, nutritional yeast, dijon mustard, turmeric, and black salt. Blend until creamy and smooth.
  4. Assemble:
    Mix the spinach mixture into the tofu filling and pour into the pre-baked crust. Smooth the top.
  5. Bake:
    Bake for 35–40 minutes, or until the top is firm and lightly golden. Let cool slightly before slicing.
