- 2 ½ cups all-purpose flour
- 1 tbsp sugar
- 1 tsp salt
- 1 packet instant yeast (2 ¼ tsp)
- 1 cup warm water
- 2 tbsp olive oil
For the Creamy Vegan Spinach Filling:
- 2 cups fresh spinach, chopped
- 1 cup vegan cream cheese
- ¼ cup vegan mozzarella or cheddar shreds
- 2 tbsp nutritional yeast
- 1 garlic clove, minced
- ½ tsp onion powder
- Salt & pepper to taste
For Topping:
- Plant-based milk (for brushing)
- Black sesame seeds or poppy seeds
👩🍳 Instructions
1. Prepare the dough (skip if using store-bought dough)
In a large bowl, combine flour, salt, sugar, and yeast. Add warm water and olive oil, mixing until a soft dough forms. Knead for 5–7 minutes until smooth, cover, and let rise for 1 hour.
2. Make the spinach dip filling
In a bowl, mix together vegan cream cheese, spinach, vegan cheese shreds, nutritional yeast, garlic, onion powder, salt, and pepper. Stir until creamy and well-combined.
3. Shape the bites
Divide the dough into small balls (about 1.5 inches). Flatten each one, place a spoonful of spinach mixture in the center, and pinch the dough closed around it.
4. Add toppings
Place seam-side down on a baking sheet. Brush lightly with plant milk and sprinkle with black sesame seeds for that gorgeous golden finish.
5. Bake
Bake at 375°F (190°C) for 18–22 minutes, or until golden and slightly puffed.
