This Vegan Spanakopita is a plant-based twist on the Greek classic — buttery layers of golden phyllo pastry stuffed with a rich, savory spinach and “feta”-style filling. It’s comfort food meets elegance — perfect for brunch, holidays, or any time you crave a little sunshine on your plate. ☀️
🥬 Ingredients
For the Filling
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 10 oz (300 g) frozen spinach, thawed and drained
- 1 block (14 oz) firm tofu, pressed
- 3 tbsp nutritional yeast
- 2 tbsp lemon juice
- 1 tbsp dill, finely chopped (fresh preferred)
- 1 tbsp parsley, chopped
- Salt & pepper, to taste
For the Pastry
- 1 package vegan phyllo pastry sheets (or puff pastry)
- 3 tbsp olive oil or vegan butter, melted
- Sesame seeds, for topping (optional)
👩🍳 Instructions
- Prepare the filling:
- In a pan, heat olive oil and sauté onion and garlic until translucent.
- Add the spinach and cook off any extra moisture.
- In a bowl, crumble the tofu and mix with nutritional yeast, lemon juice, herbs, salt, and pepper. Combine with the spinach mixture.
- Assemble the pie:
- Lay down a sheet of phyllo, brush lightly with olive oil, and repeat to make a base of 5–6 layers.
- Spread the filling evenly on top.
- Cover with another 5–6 layers of phyllo, brushing each with oil.
- Seal the edges by pressing down with a fork.
- Add the finishing touch:
- Brush the top with oil or melted vegan butter.
- Sprinkle sesame seeds on top for extra crunch and aroma.
- Bake:
- Bake at 375°F (190°C) for 30–35 minutes, or until golden and crisp.
- Let cool for 10 minutes before slicing into squares.
