🥣 Ingredients

For the Tart Crust (Gluten-Free)

  • 1 cup almond flour
  • ½ cup oat flour
  • 2 tbsp coconut sugar
  • 3 tbsp melted coconut oil
  • 1–2 tbsp plant milk (as needed)
  • Pinch of salt

For the Gooey Pecan Filling

  • ½ cup maple syrup
  • ¼ cup coconut sugar
  • 3 tbsp vegan butter
  • 1 tbsp ground flaxseed + 3 tbsp warm water (flax egg)
  • 1 tsp vanilla extract
  • ½ cup pecans (chopped + whole for topping)
  • Pinch of salt

👩‍🍳 Instructions

1️⃣ Make the Crust

Preheat your oven to 350°F (175°C).
Mix almond flour, oat flour, sugar, salt, and melted coconut oil. Add a splash of plant milk until it comes together like soft dough.

Press the dough into a lightly greased mini muffin pan. Use your thumb to form little tart shells.

Bake for 8 minutes to set.

2️⃣ Prepare the Gooey Filling

Whisk together the flax egg and let it thicken for 5 minutes.

In a saucepan, melt vegan butter with maple syrup and coconut sugar. Remove from heat, then stir in flax egg, vanilla, salt, and chopped pecans.

3️⃣ Fill & Bake

Spoon the filling into each tart shell.
Top with a whole pecan for that classic look!

Bake for 18–22 minutes, until bubbling and golden.

Let cool completely to set — the gooey center thickens as it cools.

🌿 Tips

  • Add a splash of bourbon or maple extract for a deeper flavor.
  • Want them extra gooey? Add 1 extra tablespoon maple syrup.
  • Store in the fridge for up to 5 days — they’re even better the next day!
