  • ½ cup cashews, soaked overnight (or 1 hour in hot water)
  • ¼ cup maple syrup or agave nectar
  • ¼ cup coconut cream (from the top of a chilled can)
  • 2 tbsp lemon juice
  • 2 tsp vanilla extract
  • 2 tsp agar-agar powder (or 3 tsp if you want it firmer)

Topping:

  • Fresh berries (strawberries, raspberries, or cherries)
  • Toasted coconut flakes

1️⃣ Prepare the crust:
Mix crushed biscuits, coconut oil, and maple syrup in a bowl. Press firmly into the bottom of a springform pan. Chill in the fridge while you make the filling.
