This soup is a perfect balance of savory mushrooms, tender vegetables, and nutty wild rice simmered in a flavorful broth. It’s vegan, gluten-free, and tastes even better the next day!


🌿 Ingredients

  • 1 tbsp olive oil or vegan butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 stalks celery, chopped
  • 2 cups mushrooms, sliced (cremini, button, or mixed)
  • 1 tsp thyme (dried or fresh)
  • 1 tsp oregano
  • 1 cup wild rice blend
  • 5 cups vegetable broth
  • 1 cup unsweetened plant-based milk (soy, almond, or oat)
  • 2 tbsp nutritional yeast (optional, for depth of flavor)
  • 1 tbsp tamari or soy sauce
  • Salt & pepper, to taste
  • Fresh parsley, chopped, for garnish

👩‍🍳 Instructions

1️⃣ Sauté the base:
In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Cook for about 5 minutes until softened and fragrant.

2️⃣ Add the mushrooms:
Stir in sliced mushrooms and cook for another 5–7 minutes, until they release their juices and start to brown.

3️⃣ Add rice and broth:
Add wild rice, thyme, oregano, soy sauce, and vegetable broth. Stir well, bring to a boil, then reduce heat to low. Cover and simmer for 40–45 minutes, until rice is tender.

4️⃣ Make it creamy:
Stir in plant-based milk and nutritional yeast. Simmer for another 5 minutes to thicken slightly. Adjust seasoning with salt and pepper.

5️⃣ Serve & enjoy:
Ladle into bowls, garnish with fresh parsley, and serve with toasted bread. 🍞
