Vegan Mushroom Meatballs

Vegan Mushroom Meatballs

A cozy, nostalgic recipe that even non-vegans can’t resist!

This recipe is extra special — it’s one of those comforting dishes that reminds you of home. Someone said, “My mom used to make this and it was delicious! Thankful to have found it. The name certainly rang true when I made it last night!” 💕

And honestly? I couldn’t agree more. These Vegan Mushroom Meatballs are tender, juicy, and full of rich umami flavor. They crisp up beautifully on the outside while staying soft and flavorful inside — perfect with pasta, on subs, or dipped straight into marinara. 😋✨

Whether you’re craving comfort food or impressing guests, this recipe never disappoints.

🌿 Ingredients

  • 2 cups finely chopped mushrooms
  • 1 cup cooked chickpeas or white beans, mashed
  • ½ cup breadcrumbs (use gluten-free if needed)
  • ¼ cup finely chopped onion
  • 2–3 cloves garlic, minced
  • 2 tbsp soy sauce or tamari
  • 1 tbsp tomato paste
  • 1 tbsp olive oil
  • 1 tbsp nutritional yeast (optional but amazing)
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika
  • Salt & pepper to taste

👩‍🍳 Instructions

1️⃣ Sauté the aromatics

Cook the onions, garlic, and mushrooms until soft and most of the moisture has evaporated. This step builds BIG flavor!

2️⃣ Mix the meatballs

In a bowl, combine:
mushrooms, mashed beans, breadcrumbs, seasonings, and soy sauce.
Mix until the mixture holds together. Adjust with more breadcrumbs if too wet.

3️⃣ Roll your meatballs

Form into small balls using your hands or a scoop.

4️⃣ Cook them to perfection

Bake at 400°F (200°C) for 20–25 minutes, flipping halfway.
OR pan-fry in a little oil until golden brown.

5️⃣ Serve & enjoy!

Toss with marinara, serve over spaghetti, or enjoy as appetizers with dipping sauce.

💡 Tips

✨ Add grated carrot or spinach for extra nutrition.
🔥 Want a smoky flavor? Add a dash of liquid smoke.
🍝 Perfect for meal prep — they freeze beautifully!
