These Vegan Mushroom Meatballs are everything you crave in a comfort meal — savory, juicy, and perfectly tender. Made with mushrooms, walnuts, and lentils, they’re full of flavor and satisfying texture without any meat in sight.

🌿 Ingredients

  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups mushrooms, finely chopped
  • 1 cup cooked lentils
  • ½ cup walnuts, chopped or ground
  • ¾ cup breadcrumbs (use gluten-free if needed)
  • 2 tbsp soy sauce or tamari
  • 1 tbsp tomato paste
  • 1 tbsp flaxseed meal + 3 tbsp water (flax egg)
  • 1 tsp smoked paprika
  • ½ tsp oregano
  • Salt and pepper, to taste

For the glaze:

  • ¼ cup tomato sauce
  • 1 tbsp maple syrup
  • 1 tsp soy sauce

👩‍🍳 Instructions

  1. Prep the flax egg: Combine flaxseed meal and water in a small bowl. Let sit for 5 minutes to thicken.
  2. Cook the aromatics: Heat olive oil in a skillet over medium heat. Add onion and sauté until translucent. Stir in garlic and cook for 1 minute more.
  3. Add mushrooms: Sauté until they release moisture and become golden brown (about 8 minutes). Remove from heat.
  4. Blend the mixture: In a food processor, combine cooked lentils, walnuts, mushroom mixture, soy sauce, tomato paste, and seasonings. Pulse until combined but still slightly chunky.
  5. Add breadcrumbs and flax egg: Mix everything together until the mixture holds its shape. Chill for 20 minutes if too soft.
  6. Form and bake: Shape into balls and place on a parchment-lined baking tray. Bake at 375°F (190°C) for 25–30 minutes, turning halfway through.
  7. Glaze (optional but amazing!): Mix glaze ingredients and brush over meatballs during the last 5 minutes of baking.
