    Press the tofu for 20–30 minutes to remove excess moisture. Slice into ½-inch thick rectangles.

    In a bowl, whisk together miso paste, soy sauce, maple syrup, sesame oil, vinegar, garlic, ginger, and chili flakes. Add a splash of water to thin if necessary.
  3. Marinate:
