  • 4–5 large potatoes, peeled and cubed
  • 2 tbsp vegan butter
  • ¼ cup plant-based milk (oat or soy work best)
  • Salt & pepper, to taste

👩‍🍳 Instructions

1️⃣ Prepare the mashed potatoes:
Boil potatoes until tender, then drain. Mash with vegan butter, plant milk, salt, and pepper until smooth. Set aside.

2️⃣ Cook the filling:
In a large skillet, heat olive oil and sauté onion, garlic, and carrots for about 5 minutes. Add tomato paste, herbs, soy sauce, and lentils. Pour in the vegetable broth and simmer for 10 minutes until thickened. Stir in peas.

3️⃣ Assemble the pie:
Spread the lentil filling evenly into a baking dish. Spoon mashed potatoes over the top and smooth with a fork to create texture (this helps it brown beautifully!).
