  • Crispy on the outside, tender inside
  • Freezer-friendly and perfect for meal prep
  • Delicious with pasta, in wraps, or on their own!

🥣 Ingredients

  • 1 cup cooked lentils (green or brown)
  • ½ cup breadcrumbs (use gluten-free if needed)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • ¼ cup fresh parsley, chopped
  • 1 tbsp soy sauce or tamari
  • 1 tbsp flaxseed meal + 2½ tbsp water (flax egg)
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika
  • Salt and pepper, to taste
  • Olive oil, for baking or pan-frying

👩‍🍳 Instructions

  1. Make the flax egg:
In a small bowl, combine flaxseed meal and water. Set aside for 5 minutes to thicken.
  2. Cook the aromatics:
In a skillet, sauté onions and garlic until soft and fragrant, about 5 minutes.
  3. Mix everything together:
In a large bowl, mash lentils with a fork or potato masher. Add sautéed onions, garlic, parsley, soy sauce, flax egg, breadcrumbs, and spices. Mix until well combined.
  4. Form meatballs:
Roll mixture into bite-sized balls (about 1 inch).
  5. Cook:
    • To bake: Place on a lined baking sheet, brush lightly with oil, and bake at 400°F (200°C) for 20–25 minutes, flipping halfway.
    • To pan-fry: Heat oil in a skillet and cook until golden brown on all sides.
