Today I’m sharing one of my all-time favorite desserts — this silky-smooth, sunshine-bright Vegan Lemon Cream Pie. It’s rich, creamy, perfectly tangy, and requires no baking at all. 🌞

This pie has that melt-in-your-mouth texture you crave in a classic lemon pie — but it’s 100% plant-based, dairy-free, and egg-free. It’s proof that vegan desserts can be both elegant and effortless.


🌱 Ingredients

For the crust:

  • 1 ½ cups vegan graham cracker crumbs (or digestive biscuits)
  • ¼ cup melted coconut oil or vegan butter
  • 2 tbsp maple syrup

For the lemon cream filling:

  • 1 ½ cups coconut cream (from chilled full-fat coconut milk)
  • ½ cup fresh lemon juice
  • 1 tbsp lemon zest
  • ⅓ cup maple syrup or agave nectar
  • 3 tbsp cornstarch (or arrowroot powder)
  • ¼ cup unsweetened plant milk (soy, oat, or almond)
  • 1 tsp pure vanilla extract
  • A pinch of turmeric (for color, optional)

👩‍🍳 Directions

  1. Make the crust:
    Combine graham crumbs, melted coconut oil, and maple syrup in a bowl. Press firmly into a pie pan. Chill in the fridge while you make the filling.
  2. Prepare the lemon cream:
    In a saucepan, whisk together cornstarch and plant milk until smooth. Add lemon juice, zest, coconut cream, maple syrup, vanilla, and turmeric.
  3. Cook until thickened:
    Place over medium heat, stirring constantly until the mixture thickens and starts to bubble (about 6–8 minutes).
  4. Assemble:
    Pour the warm filling into the chilled crust. Smooth the top with a spatula.
  5. Chill to set:
    Refrigerate for at least 4 hours, or overnight for the best texture.
  6. Slice and enjoy!
    Garnish with coconut whipped cream, lemon zest, or fresh berries if you’d like.
