This Vegan Lasagna is the ultimate comfort food — rich tomato sauce, creamy tofu ricotta, tender noodles, and hearty greens all baked to golden perfection. It’s 100% plant-based but tastes so indulgent, no one will believe it’s vegan!
🍅 Ingredients
For the sauce:
- 1 tbsp olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 can (15 oz) tomato sauce
- 1 can (15 oz) diced tomatoes
- 1 tsp oregano
- ½ tsp basil
- Salt & pepper, to taste
- Optional: ½ cup lentils or vegan ground crumbles for extra protein
For the vegan ricotta:
- 1 block (14 oz) firm tofu, drained
- 2 tbsp nutritional yeast
- 1 tbsp lemon juice
- 1 tbsp olive oil
- ½ tsp garlic powder
- Salt & pepper to taste
- 2 cups fresh spinach, chopped
For assembly:
- 9–12 lasagna noodles, cooked al dente
- 1 cup vegan mozzarella (optional, for topping)
👩🍳 Instructions
1️⃣ Make the sauce:
In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant. Stir in tomato sauce, diced tomatoes, and seasonings. Simmer for 10–15 minutes.
2️⃣ Prepare the tofu ricotta:
In a food processor, combine tofu, nutritional yeast, lemon juice, olive oil, garlic powder, salt, and pepper. Blend until smooth and creamy. Stir in chopped spinach.
3️⃣ Layer it up:
In a baking dish, spread a thin layer of sauce. Add a layer of noodles, then tofu ricotta, then sauce. Repeat until all ingredients are used, finishing with sauce on top. Sprinkle with vegan mozzarella if desired.
4️⃣ Bake:
Cover with foil and bake at 375°F (190°C) for 25 minutes. Uncover and bake for another 10–15 minutes, until bubbly and golden.
5️⃣ Serve:
Let it cool for 10 minutes before slicing. Garnish with fresh basil and enjoy every cozy, cheesy bite! 🍴
