How to Make Vegan Eggplant Lasagna
- Prep the eggplant
Sprinkle slices with salt and let sit 15–20 minutes to remove moisture. Pat dry. Roast at 400°F (200°C) for 20 minutes until tender. - Make the vegan ricotta
