🛒 Ingredients
- 3 cups corn (fresh, frozen, or canned)
- ¾ cup plant milk (unsweetened)
- ¼ cup raw cashews (soaked 10 min OR use cashew butter)
- 1 tbsp vegan butter or olive oil
- 2 cloves garlic (minced)
- 1 tbsp nutritional yeast (optional cheesy flavor)
- Salt & pepper to taste
- Pinch of paprika or chili flakes (optional)
👩🍳 Instructions
1️⃣ Make the Cream
Blend:
- plant milk + cashews
until smooth and silky
2️⃣ Sauté
In a pan:
- melt vegan butter
- sauté garlic (1–2 minutes)
3️⃣ Add Corn
Stir in corn and cook for 3–5 minutes
4️⃣ Pour Cream
Add blended sauce + nutritional yeast
Simmer until thick and creamy (about 5 minutes)
5️⃣ Season & Serve
Add salt, pepper, and paprika
