Ingredients
For the Brownie Layer:
1 cup all-purpose flour
1 cup coconut sugar (or brown sugar)
½ cup unsweetened cocoa powder
1 tsp baking powder
½ tsp salt
½ cup melted coconut oil (or vegan butter)
½ cup non-dairy milk
1 tsp vanilla extract
For the Peanut Butter Layer:
¾ cup creamy peanut butter
3 tbsp maple syrup
2 tbsp coconut oil, melted
For the Chocolate Ganache:
1 cup vegan dark chocolate chips
½ cup coconut cream
Directions
Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
In a bowl, mix dry brownie ingredients. Add wet ingredients and stir until smooth.
Pour batter into pan and bake for 25–30 minutes. Let cool completely.
Mix peanut butter layer ingredients and spread evenly over cooled brownies.
For the ganache, heat coconut cream until warm, then pour over chocolate chips. Stir until smooth. Spread on top of the peanut butter layer.
Chill for 1–2 hours, then slice and enjoy that gooey, fudgy perfection! ![]()
