- 1 medium head cauliflower, cut into florets
- 1 medium carrot, shredded
- ¼ cup chopped celery
- 1 small onion, chopped
- 3 cups vegetable broth

- 2 tbsp olive oil or vegan butter
- 2 tbsp all-purpose flour (or gluten-free flour blend)
- Salt and pepper, to taste

1️⃣ Sauté the veggies:
In a large pot, heat olive oil over medium heat. Add onion, carrot, and celery. Cook for 4–5 minutes until softened and fragrant.
