Vegan Carrot & Orange Cake (No Flour, No Sugar)

This naturally sweetened vegan carrot & orange cake is moist, zesty, and packed with wholesome ingredients—no refined flour or sugar needed. Perfect for a lighter dessert that still feels indulgent!


🛒 Ingredients

Dry Ingredients:

  • 1 ½ cups almond flour
  • ½ cup oat flour (or blended oats)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • Pinch of salt

Wet Ingredients:

  • 1 cup finely grated carrots
  • ½ cup fresh orange juice
  • Zest of 1 orange
  • ½ cup unsweetened applesauce
  • ⅓ cup maple syrup or date syrup (natural sweetener)
  • 1 tsp vanilla extract
  • ¼ cup melted coconut oil

Optional Add-ins:

  • ¼ cup chopped walnuts or pecans
  • 2 tbsp unsweetened shredded coconut

👩‍🍳 Instructions

  1. Preheat Oven
    Set to 350°F (175°C) and line a cake pan.
  2. Mix Dry Ingredients
    Combine almond flour, oat flour, baking powder, baking soda, spices, and salt.
  3. Mix Wet Ingredients
    Whisk together carrots, orange juice, zest, applesauce, syrup, vanilla, and coconut oil.
  4. Combine
    Fold wet into dry until just combined. Add nuts if using.
  5. Bake
    Pour into pan and bake for 30–35 minutes, until a toothpick comes out clean.
  6. Cool & Serve
    Let cool completely before slicing.

🍊 Optional Orange Drizzle (No Sugar)

  • ¼ cup cashew butter
  • 2–3 tbsp fresh orange juice
  • 1 tsp maple syrup (optional)

Mix until smooth and drizzle over the cake.
