Vegan Carrot & Orange Cake (No Flour, No Sugar)

🛒 Ingredients
Dry Ingredients:
- 1 ½ cups almond flour
- ½ cup oat flour (or blended oats)
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp cinnamon
- ¼ tsp nutmeg
- Pinch of salt
Wet Ingredients:
- 1 cup finely grated carrots
- ½ cup fresh orange juice
- Zest of 1 orange
- ½ cup unsweetened applesauce
- ⅓ cup maple syrup or date syrup (natural sweetener)
- 1 tsp vanilla extract
- ¼ cup melted coconut oil
Optional Add-ins:
- ¼ cup chopped walnuts or pecans
- 2 tbsp unsweetened shredded coconut

- Preheat Oven
Set to 350°F (175°C) and line a cake pan. - Mix Dry Ingredients
Combine almond flour, oat flour, baking powder, baking soda, spices, and salt. - Mix Wet Ingredients
Whisk together carrots, orange juice, zest, applesauce, syrup, vanilla, and coconut oil. - Combine
