Super Crispy Vegan Oven-Baked Zucchini Sticks

These super crispy vegan zucchini sticks are baked—not fried—but still incredibly crunchy on the outside and tender inside. Perfect as a snack, appetizer, or healthy side!


🛒 Ingredients

  • 2 medium zucchinis, cut into sticks
  • ½ cup plant milk (unsweetened)
  • 1 tsp lemon juice (to thicken “buttermilk”)

Coating:

  • ½ cup breadcrumbs or panko (use gluten-free if needed)
  • ¼ cup almond flour
  • 2 tbsp nutritional yeast
  • 1 tsp garlic powder
  • ½ tsp paprika
  • Salt & pepper

Optional:

  • Light spray of olive oil for extra crispiness

👩‍🍳 Instructions

  1. Preheat Oven
    Set to 425°F (220°C). Line a tray with parchment.
  2. Prepare “Buttermilk”
    Mix plant milk with lemon juice and let sit 2–3 minutes.
  3. Mix Coating
    Combine breadcrumbs, almond flour, nutritional yeast, and spices.
  4. Coat Zucchini
    Dip each stick into plant milk, then coat well in breadcrumb mixture.
  5. Arrange & Bake
    Place on tray without overcrowding. Lightly spray with oil.
  6. Bake
    Bake for 20–25 minutes, flipping halfway, until golden and crispy.
