Super Crispy Vegan Oven-Baked Zucchini Sticks
These super crispy vegan zucchini sticks are baked—not fried—but still incredibly crunchy on the outside and tender inside. Perfect as a snack, appetizer, or healthy side!
🛒 Ingredients
- 2 medium zucchinis, cut into sticks
- ½ cup plant milk (unsweetened)
- 1 tsp lemon juice (to thicken “buttermilk”)
Coating:
- ½ cup breadcrumbs or panko (use gluten-free if needed)
- ¼ cup almond flour
- 2 tbsp nutritional yeast
- 1 tsp garlic powder
- ½ tsp paprika
- Salt & pepper
Optional:
- Light spray of olive oil for extra crispiness
👩🍳 Instructions
- Preheat Oven
Set to 425°F (220°C). Line a tray with parchment. - Prepare “Buttermilk”
Mix plant milk with lemon juice and let sit 2–3 minutes. - Mix Coating
Combine breadcrumbs, almond flour, nutritional yeast, and spices. - Coat Zucchini
Dip each stick into plant milk, then coat well in breadcrumb mixture. - Arrange & Bake
Place on tray without overcrowding. Lightly spray with oil. - Bake
Bake for 20–25 minutes, flipping halfway, until golden and crispy.
