🥘 Ingredients (Serves 9–12)

For the Crust

  • 1 ½ cups almond flour
  • ¼ cup powdered erythritol or monk fruit sweetener
  • ¼ cup melted butter
  • ½ tsp vanilla extract
  • Pinch of salt

For the Pecan Filling

  • 1 cup chopped pecans
  • ½ cup whole pecans
  • ⅓ cup sugar-free maple syrup
  • ¼ cup butter
  • ¼ cup powdered erythritol or monk fruit sweetener
  • 1 egg
  • 1 tsp vanilla extract
  • Pinch of salt

Step 1: Prepare the Crust

Preheat oven to 350°F (175°C).

In a bowl mix:

  • Almond flour
  • Sweetener
  • Melted butter
  • Vanilla
  • Salt

Press the mixture evenly into a lined 8×8 baking dish.

Bake for 10 minutes until lightly golden.


Step 2: Make the Pecan Filling

In a saucepan melt:

  • Butter
  • Sugar-free maple syrup
  • Sweetener

Simmer for 2–3 minutes, then remove from heat.

Whisk in:

  • Vanilla
  • Salt

Stir in the pecans.


Step 3: Assemble

Pour the pecan mixture evenly over the baked crust.


Step 4: Bake

Bake for 18–22 minutes until the topping is set and slightly bubbly.


Step 5: Cool & Slice

Allow the bars to cool completely before cutting into squares.
