Diabetic-Friendly Lemon Truffles (Sugar-Free, Low-Carb, Melt-in-Your-Mouth!)

🛒 Ingredients (Makes 20–24 truffles)

For the Truffle Base

  • 8 oz cream cheese, softened
  • 4 tbsp unsalted butter, softened
  • ½ cup powdered sugar substitute (erythritol, allulose, or monk fruit)
  • 1 tbsp heavy cream
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • ½ tsp vanilla extract
  • 1–2 drops natural yellow food coloring (optional, for color)

Coating

  • ½ cup superfine almond flour or coconut flour (for rolling)
  • OR powdered sweetener
  • OR leave plain (they look gorgeous as-is!)

👩‍🍳 Instructions

1️⃣ Beat the Creamy Base

In a mixing bowl, beat together:

  • softened cream cheese
  • softened butter
  • powdered sweetener

Mix until fluffy and smooth.


2️⃣ Add the Lemon Goodness

Stir in:

  • lemon juice
  • lemon zest
  • heavy cream
  • vanilla extract
  • (optional) yellow coloring

Blend until silky and thick.


3️⃣ Chill the Dough

Refrigerate the mixture for 30–40 minutes until firm enough to scoop.


4️⃣ Roll Into Truffles

Scoop out teaspoon- or tablespoon-sized portions and roll into smooth balls.

Optional: roll each truffle in almond flour, coconut flour, or powdered sweetener for a soft coating.


5️⃣ Freeze or Refrigerate

  • For soft & creamy: refrigerate 1 hour
  • For firmer, ice-cream-like bites: freeze 20–30 minutes

Serve chilled!
