🛒 Ingredients (Makes 20–24 truffles)
For the Truffle Base
- 8 oz cream cheese, softened
- 4 tbsp unsalted butter, softened
- ½ cup powdered sugar substitute (erythritol, allulose, or monk fruit)
- 1 tbsp heavy cream
- 2 tbsp fresh lemon juice
- 1 tbsp lemon zest
- ½ tsp vanilla extract
- 1–2 drops natural yellow food coloring (optional, for color)
Coating
- ½ cup superfine almond flour or coconut flour (for rolling)
- OR powdered sweetener
- OR leave plain (they look gorgeous as-is!)
👩🍳 Instructions
1️⃣ Beat the Creamy Base
In a mixing bowl, beat together:
- softened cream cheese
- softened butter
- powdered sweetener
Mix until fluffy and smooth.
2️⃣ Add the Lemon Goodness
Stir in:
- lemon juice
- lemon zest
- heavy cream
- vanilla extract
- (optional) yellow coloring
Blend until silky and thick.
3️⃣ Chill the Dough
Refrigerate the mixture for 30–40 minutes until firm enough to scoop.
4️⃣ Roll Into Truffles
Scoop out teaspoon- or tablespoon-sized portions and roll into smooth balls.
Optional: roll each truffle in almond flour, coconut flour, or powdered sweetener for a soft coating.
5️⃣ Freeze or Refrigerate
- For soft & creamy: refrigerate 1 hour
- For firmer, ice-cream-like bites: freeze 20–30 minutes
