Ingredients

- 1½ cups almond flour
- ¼ cup coconut flour
- ¾ cup monk fruit or erythritol sweetener
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 3 large eggs
- ⅓ cup melted coconut oil or light butter
- ½ cup unsweetened almond milk
- 1 tsp banana extract (optional, for bakery-style depth)
- 1 tsp vanilla extract
- ½ cup chopped pecans
Sugar-Free Glaze
- ½ cup powdered monk fruit sweetener
- 2–3 tbsp unsweetened almond milk
- ½ tsp vanilla extract
Instructions
- Preheat oven to 350°F. Grease or line a 9×5 loaf pan.
- In a bowl, combine almond flour, coconut flour, sweetener, baking powder, baking soda, and salt.
- In another bowl, whisk eggs, melted oil, almond milk, and extracts.
- Mix wet ingredients into dry ingredients until smooth.
- Fold in chopped pecans.
- Pour batter into prepared pan.
- Bake 40–50 minutes, until center is fully set.
- Cool completely before glazing.
- Whisk glaze ingredients and drizzle over loaf. Sprinkle extra pecans if desired.
