Ingredients

Loaf

  • 1½ cups almond flour
  • ¼ cup coconut flour
  • ¾ cup monk fruit or erythritol sweetener
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 3 large eggs
  • ⅓ cup melted coconut oil or light butter
  • ½ cup unsweetened almond milk
  • 1 tsp banana extract (optional, for bakery-style depth)
  • 1 tsp vanilla extract
  • ½ cup chopped pecans

Sugar-Free Glaze

  • ½ cup powdered monk fruit sweetener
  • 2–3 tbsp unsweetened almond milk
  • ½ tsp vanilla extract

Instructions

  1. Preheat oven to 350°F. Grease or line a 9×5 loaf pan.
  2. In a bowl, combine almond flour, coconut flour, sweetener, baking powder, baking soda, and salt.
  3. In another bowl, whisk eggs, melted oil, almond milk, and extracts.
  4. Mix wet ingredients into dry ingredients until smooth.
  5. Fold in chopped pecans.
  6. Pour batter into prepared pan.
  7. Bake 40–50 minutes, until center is fully set.
  8. Cool completely before glazing.
  9. Whisk glaze ingredients and drizzle over loaf. Sprinkle extra pecans if desired.
