This Blueberry Cake is soft, moist, and packed with juicy blueberries. It’s a perfect low-carb dessert or breakfast treat, made with almond flour and sugar-free sweetener to keep it diabetic-friendly and keto-approved.

🥘 Ingredients (Serves 9)

  • 1 ½ cups almond flour
  • ¼ cup coconut flour
  • ⅓ cup powdered erythritol or monk fruit sweetener
  • 1 tsp baking powder
  • ¼ tsp salt
  • 3 large eggs
  • ¼ cup melted butter or coconut oil
  • ½ cup unsweetened almond milk
  • 1 tsp vanilla extract
  • ¾ cup fresh blueberries
  • Optional: 1 tbsp lemon zest

👩‍🍳 Instructions

Step 1: Preheat the Oven

Preheat oven to 350°F (175°C).

Line or grease an 8×8 baking pan.


Step 2: Mix Dry Ingredients

In a bowl combine:

  • Almond flour
  • Coconut flour
  • Sweetener
  • Baking powder
  • Salt

Mix well.


Step 3: Mix Wet Ingredients

In another bowl whisk:

  • Eggs
  • Melted butter
  • Almond milk
  • Vanilla extract

Step 4: Combine Batter

Add wet ingredients to dry ingredients and mix until smooth.

Gently fold in the blueberries.


Step 5: Bake

Pour batter into the prepared pan.

Bake for 25–30 minutes until golden and a toothpick inserted comes out clean.


Step 6: Cool & Serve

Allow the cake to cool before slicing.

Optional: dust lightly with powdered keto sweetener.
