🛒 Ingredients (Serves 2–3)

  • 3–4 cups green cabbage, finely shredded
  • 3 large eggs, beaten
  • 1 small onion, finely chopped (optional but recommended)
  • 1 clove garlic, minced
  • 1 tsp olive oil or cooking spray
  • Salt & black pepper, to taste

Optional add-ins (low-point friendly):

  • Chopped green onions
  • Paprika or smoked paprika
  • Dill or parsley
  • Red pepper flakes

👩‍🍳 How to Make It

1️⃣ Sauté the cabbage

Heat oil or spray in a large skillet over medium heat. Add onion (if using) and cook 2–3 minutes until softened. Add cabbage and garlic, season lightly with salt and pepper, and cook 5–7 minutes until cabbage is tender and lightly golden.

2️⃣ Add the eggs

Reduce heat slightly. Pour beaten eggs evenly over the cabbage. Let sit for 30–60 seconds, then gently stir or shape into patties if desired.

3️⃣ Cook until set

Cook until eggs are fully set and lightly browned on the bottom. Flip patties carefully if making fritter-style, or keep scrambled-style for a softer texture.

4️⃣ Serve hot

Finish with herbs, extra pepper, or a squeeze of lemon if you like.
