  • ½ cup mushrooms, chopped
  • 14 oz (1 block) firm tofu, drained
  • ¼ cup unsweetened plant milk
  • 2 tbsp nutritional yeast
  • 1 tbsp cornstarch
  • ½ tsp turmeric (for color)
  • ½ tsp black salt (kala namak) — for an “eggy” flavor
  • ½ tsp thyme or Italian seasoning
  • Salt & pepper, to taste

👩‍🍳 Instructions

  1. Prepare the crust:
    • In a bowl, combine flour and salt. Cut in vegan butter until crumbly.
    • Add cold water gradually until a dough forms.
    • Roll out and press into a 9-inch pie dish. Poke a few holes with a fork.
    • Pre-bake at 375°F (190°C) for 10 minutes, then set aside.
  2. Cook the veggies:
    • In a skillet, heat olive oil. Sauté onion and garlic until fragrant.
    • Add mushrooms, spinach, and tomatoes. Cook until softened.
  3. Blend the tofu mixture:
    • In a blender, combine tofu, plant milk, nutritional yeast, cornstarch, turmeric, black salt, thyme, salt, and pepper. Blend until smooth.
  4. Assemble the quiche:
    • Combine the sautéed veggies with the tofu mixture. Pour into the pre-baked crust.
    • Smooth the top with a spatula.
  5. Bake:
    • Bake for 35–40 minutes or until the top is golden and firm to the touch.
    • Let cool for 10 minutes before slicing.
