🛒 Ingredients (Nut-Free & Low-Carb)

Dry Ingredients

  • ¾ cup lupin flour
  • ½ cup granulated sweetener (allulose for soft, erythritol for crisp)
  • ½ tsp baking powder
  • ¼ tsp salt

Wet Ingredients

  • ½ cup unsalted butter, melted
  • 1 large egg
  • 2 tsp vanilla extract

Add-Ins

  • ½ cup sugar-free chocolate chips

🥣 Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment.
  2. Mix dry ingredients in one bowl — lupin flour, sweetener, baking powder, salt.
  3. In a second bowl, whisk melted butter, egg, and vanilla.
  4. Combine wet + dry. Stir until a soft dough forms.
  5. Fold in chocolate chips.
  6. Scoop into balls (1–1.5 tbsp) and gently flatten — they will spread slightly.
  7. Bake 10–12 minutes, or until edges turn golden.
  8. Let cool completely so they set into the perfect chewy cookie.
