Ingredients

Instructions

1. Prep the Oven

Preheat oven to 350°F (175°C).
Line a baking sheet with parchment paper.

2. Mix Dry Ingredients

In a bowl, whisk together:

  • almond flour
  • coconut flour
  • ginger
  • cinnamon
  • cloves
  • baking soda
  • salt

3. Cream Butter & Sweetener

In a large bowl, beat:

  • softened butter
  • ¾ cup monk fruit sweetener

Mix until light and fluffy — about 2 minutes.

4. Add Egg, Molasses & Vanilla

Beat in:

  • egg
  • molasses
  • vanilla extract

5. Add Dry Mix

Stir dry ingredients into wet until a soft dough forms.
Chill 20–30 minutes for easier rolling.

6. Roll & Coat

Scoop 1-inch balls. Roll them in the sugar-free sweetener until fully coated.

7. Bake

Place on prepared baking sheet with space to spread.
Bake 10–12 minutes — remove while centers still look slightly soft.

8. Cool

Let cookies cool on the baking sheet for 5 minutes, then transfer to a rack.
