My Most Popular Diabetic-Friendly Christmas Cookies
My Most Popular Diabetic-Friendly Christmas Cookies
Soft • Chewy • Spiced • Sugar-Free Holiday Magic
These cookies are absolute Christmas legends in my kitchen — the kind of cookies that disappear faster than you can pull the next batch from the oven. For years, I’ve made hundreds of these during the holidays (sometimes over 500!), and nobody can ever tell they’re sugar-free and diabetic-friendly.
They’re soft, gently spiced, rolled in a sparkling sugar-free coating, and packed with that nostalgic molasses-ginger flavor that makes Christmas feel like Christmas.
If you’ve been looking for a diabetic-friendly cookie that tastes just as magical as the original — you’ve officially found the recipe.
❤️ Why This Recipe Works

✔ Uses a tiny bit of molasses for real gingerbread flavor
✔ Great for batch baking & holiday gifting
✔ Freezer-friendly
These are foolproof and crowd-pleasing — even for people who don’t eat sugar-free!
