⭐ Ingredients (Makes 10–12 fritters)

  • 2 medium zucchinis, grated
  • 2 large eggs
  • 1 cup shredded mozzarella or cheese of choice
  • 2 tbsp fresh dill (or parsley)
  • ¼ cup almond flour OR 2 tbsp coconut flour
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • Olive oil or avocado oil (for frying)

🥣 Instructions

1. Prep the zucchini

Grate zucchinis, sprinkle lightly with salt, and let sit 10 minutes.
Squeeze out excess moisture — this is the secret to crisp fritters!

2. Mix batter

In a bowl combine:
zucchini + eggs + cheese + dill + flour + garlic powder + salt + pepper.
Mix until thick and spoonable.

3. Cook the fritters

Heat oil in a skillet over medium heat.
Drop spoonfuls of batter and flatten slightly.
Cook 3–4 minutes per side until golden brown.
