This Low-Carb Taco Casserole is loaded with seasoned beef, melty cheese, and fresh toppings — all the taco flavor without the carbs from tortillas. It’s perfect for meal prep, weeknight dinners, and family meals.


🥘 Ingredients (Serves 6)

Base

  • 1 lb ground beef
  • 1 tbsp olive oil
  • ½ onion (chopped)
  • 2 cloves garlic (minced)
  • 2 tbsp taco seasoning (low-carb)
  • ½ cup tomato sauce (no sugar added)

Creamy Layer

  • ½ cup sour cream
  • 4 oz cream cheese (softened)

Toppings

  • 1 ½ cups shredded cheddar or Mexican blend cheese
  • ¼ cup sliced black olives
  • 1 small tomato (diced)
  • 1 jalapeño (sliced, optional)
  • Fresh cilantro

👩‍🍳 Instructions

1️⃣ Cook the Meat

In a skillet:

  • Heat olive oil
  • Cook onion and garlic until soft
  • Add ground beef and cook until browned

Drain excess fat.


2️⃣ Season It

Stir in:

  • Taco seasoning
  • Tomato sauce

Simmer for 5 minutes.


3️⃣ Make Cream Layer

Mix together:

  • Sour cream
  • Cream cheese

4️⃣ Assemble

In a baking dish:

  1. Spread beef mixture
  2. Add creamy layer
  3. Sprinkle cheese on top

5️⃣ Bake

Bake at 375°F (190°C) for 15–20 minutes until bubbly.


6️⃣ Add Fresh Toppings
