This Low-Carb Taco Casserole is loaded with seasoned beef, melty cheese, and fresh toppings — all the taco flavor without the carbs from tortillas. It’s perfect for meal prep, weeknight dinners, and family meals.
🥘 Ingredients (Serves 6)
Base
- 1 lb ground beef
- 1 tbsp olive oil
- ½ onion (chopped)
- 2 cloves garlic (minced)
- 2 tbsp taco seasoning (low-carb)
- ½ cup tomato sauce (no sugar added)
Creamy Layer
- ½ cup sour cream
- 4 oz cream cheese (softened)
Toppings
- 1 ½ cups shredded cheddar or Mexican blend cheese
- ¼ cup sliced black olives
- 1 small tomato (diced)
- 1 jalapeño (sliced, optional)
- Fresh cilantro
👩🍳 Instructions
1️⃣ Cook the Meat
In a skillet:
- Heat olive oil
- Cook onion and garlic until soft
- Add ground beef and cook until browned
Drain excess fat.
2️⃣ Season It
Stir in:
- Taco seasoning
- Tomato sauce
Simmer for 5 minutes.
