They’re low-carb, diabetic-friendly, and perfect for when you want something special but still simple enough to whip up in minutes. And yes… they make huge bakery-style cookies just like the photos!


🛒 Ingredients

Dry Ingredients

  • 1 ½ cups almond flour (super fine works best)
  • ¼ cup coconut flour
  • 1 tsp baking powder
  • ¼ tsp salt

Wet Ingredients

  • 4 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar-free sweetener (erythritol, allulose, or monk fruit blend)
  • 1 large egg
  • 1 tsp vanilla extract

Mix-Ins

  • ¾ cup freeze-dried strawberries, lightly crushed
    (fresh strawberries add too much moisture — freeze-dried works perfectly for low-carb)
  • Optional: 2 tbsp sugar-free white chocolate chips

🍪 How to Make Them

1️⃣ Cream the base

Beat together:

  • Butter
  • Cream cheese
  • Sweetener

Mix until smooth, creamy, and fluffy.


2️⃣ Add egg + vanilla

Mix just until combined — don’t overbeat.


3️⃣ Add the dry ingredients

Stir in:

  • Almond flour
  • Coconut flour
  • Baking powder
  • Salt

Dough will be thick and soft.


4️⃣ Fold in the strawberries

Gently stir in your freeze-dried strawberry pieces.
They’ll soften beautifully in the oven.


5️⃣ Scoop big bakery cookies

Use a large cookie scoop or shape your own.
Place on parchment — these cookies puff rather than spread.


6️⃣ Bake

Bake at 350°F (175°C) for 12–15 minutes,
or until the edges are lightly golden but centers are still soft.
