- 1 lb breakfast sausage (mild or spicy)
- 8 large eggs
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella (optional but makes them extra gooey)
- ¼ cup heavy cream
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt & pepper to taste
- Optional add-ins: diced peppers, green onions, spinach, jalapeños
👩🍳 Instructions
1️⃣ Brown the sausage
Cook sausage in a skillet until browned. Drain excess grease and let cool slightly.
2️⃣ Whisk the egg mixture
In a mixing bowl, whisk eggs, cream, garlic powder, onion powder, salt, and pepper.
3️⃣ Combine & fill
Stir in the cooked sausage and shredded cheeses.
Spoon mixture evenly into a lined or greased muffin tin.
4️⃣ Bake
Bake at 350°F (175°C) for 20–25 minutes, or until muffins are golden, set, and puffy.
5️⃣ Cool & enjoy
Let them cool for 5–10 minutes — they’ll firm up perfectly and release easily from the liners.
