Low-Carb Pumpkin Spice Truffles (Diabetic Friendly)

Soft, creamy, spiced centers dipped in sugar-free white chocolate — just like the picture!

✨ Ingredients (Makes ~18 truffles)

For the truffle filling:

  • 1 cup almond flour
  • 4 tbsp softened cream cheese
  • 3 tbsp pumpkin purée
  • 2 tbsp melted butter
  • 3–4 tbsp sweetener (erythritol, monk fruit, or allulose)
  • 1 tsp pumpkin spice
  • ½ tsp vanilla extract
  • Pinch of salt

For coating:

  • 1 cup sugar-free white chocolate chips
  • 1 tsp coconut oil (helps smooth dipping)

Optional topping (like in photo):

  • Crushed sugar-free cookies or
  • A pinch of almond flour mixed with sweetener + pumpkin spice

🍽️ Instructions

1. Make the filling

In a bowl, mix:
Pumpkin purée + cream cheese + melted butter + sweetener + vanilla.
Stir in almond flour, pumpkin spice, salt.
It should form a soft dough.

Chill 20–30 minutes so it firms up.

2. Shape the truffles

Roll dough into balls (about 1 tbsp each).
Place on parchment and freeze 10 minutes.

3. Coat in white chocolate

Melt sugar-free white chocolate + coconut oil.
Dip each ball using a fork.
Place back on parchment.

Drizzle extra chocolate and sprinkle topping.

Chill until set.
