Ingredients (6 Servings)

  • 1 lb lean ground beef
  • 2 cups cauliflower florets (lightly steamed or roasted)
  • 1 ½ cups low-sugar marinara sauce
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup sliced mushrooms
  • ½ cup diced green bell pepper
  • ¼ cup sliced pepperoni
  • ½ tsp Italian seasoning
  • ½ tsp garlic powder
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 375°F.
  2. Brown ground beef in a skillet; drain excess fat.
  3. Stir in Italian seasoning, garlic powder, salt, and pepper.
  4. In a greased baking dish, layer cauliflower on the bottom.
  5. Top with cooked beef.
  6. Spread marinara evenly over the meat.
  7. Add mushrooms, bell peppers, and pepperoni.
  8. Sprinkle mozzarella over the top.
  9. Bake 20–25 minutes until cheese is melted and bubbly.
  10. Let rest 5 minutes before serving.
