Low-Carb Coconut Protein Bars

Soft, chewy, chocolate-dipped, and naturally sweet — these bars taste like a protein-packed, keto-friendly Mounds bar!

They’re rich, creamy, packed with fibre, and dipped in silky chocolate for that satisfying “snap” when you bite in.
Perfect for dessert, snack time, or a sweet post-workout treat that won’t spike blood sugar. 🌿✨


⭐ Ingredients

(All easy to find — I’ll use generic names so you can get them anywhere.)

Coconut Filling

  • 2 cups unsweetened shredded coconut
  • ½ cup coconut cream or thick full-fat coconut milk
  • 3 tbsp powdered sweetener (erythritol, monk fruit, or allulose)
  • 1 scoop vanilla protein powder (whey, plant, or collagen — your choice)
  • 1 tsp vanilla extract
  • Pinch of salt

Chocolate Coating

  • 1 cup sugar-free chocolate chips
  • 1 tbsp coconut oil

👩‍🍳 Instructions

1. Make the coconut base

In a bowl, mix shredded coconut, coconut cream, sweetener, protein powder, vanilla, and salt.
Stir until a thick, sticky dough forms.

2. Shape the bars

Press the mixture firmly into a parchment-lined loaf pan, or shape by hand into small rectangles.
Freeze for 20–25 minutes to firm up.

3. Melt the chocolate

In a small bowl, melt chocolate chips + coconut oil together (microwave or stovetop).
Stir until smooth and glossy.

4. Dip & coat

Remove bars from the freezer and dip each one into the melted chocolate, coating completely.
Place on parchment paper and refrigerate until the chocolate sets.

5. Enjoy!

Store in the fridge for soft bars or freezer for firmer bars.
