Coconut Filling

  • 2 cups unsweetened shredded coconut
    (Canada/US: Bulk Barn, Walmart, any baking aisle; UK: Tesco/Sainsbury’s “desiccated coconut”)
  • ½ cup coconut cream or heavy cream
  • 3 tbsp butter, softened
  • ¼ cup powdered sugar-free sweetener
    (erythritol, monk fruit, or Splenda “granulated”)
  • 1 tsp vanilla extract

Chocolate Drizzle

  • ½ cup sugar-free dark chocolate chips
    (Canada: Krisda, Lily’s; US: Lily’s, ChocZero; UK: Lindt 85–90% works too)
  • 1 tsp coconut oil (optional for smoother drizzling)

👩‍🍳 Instructions

1. Make the coconut mixture

In a bowl, mix:
✔ shredded coconut
✔ cream
✔ butter
✔ sweetener
✔ vanilla

Stir until thick and sticky.
If mixture feels too dry → add 1–2 tsp more cream.
If too wet → add 1–2 tbsp extra coconut.


2. Form the balls

Scoop tablespoonfuls and roll into round balls.
Place in mini cupcake liners or on a parchment tray.

Refrigerate 20–30 minutes to firm up.


3. Drizzle with chocolate

Melt the chocolate + coconut oil until smooth.
Drizzle over the chilled coconut balls (or dip them fully for a thicker coating).

Let the chocolate set in the fridge for 10 minutes.
