Low-Carb Butter Cookies (Diabetic-Friendly)

Soft, tender, buttery, and incredibly easy — just like traditional shortbread but without the blood sugar spike.
🛒 Ingredients (Makes 12–14 cookies)
- 1 cup almond flour (super-fine works best)
- 4 tbsp softened butter (room temperature)
- 3 tbsp powdered sweetener
(monk fruit, allulose, or erythritol — powdered gives the best texture) - 1 tsp vanilla extract
- Pinch of salt
Optional: Add 1–2 tbsp cream cheese for a denser, shortbread-like cookie.
👩🍳 Instructions
1️⃣ Mix Dough
- Beat softened butter with powdered sweetener until creamy.
- Add vanilla and salt.
- Mix in the almond flour until a soft dough forms.
- Chill dough for 15 minutes (helps with shaping).
2️⃣ Shape Cookies
- Roll dough into small balls (about 1–1.5 tbsp each).
- Place on a baking sheet lined with parchment.
- Press each ball gently with a fork in a criss-cross pattern — like in your photo.
3️⃣ Bake
- Bake at 325°F (165°C) for 10–12 minutes
- Edges should be lightly golden; centers will still be soft (they firm up as they cool).
Let cool completely before moving — almond flour cookies are fragile when warm.
