This Loaded Zucchini Bake is one of those recipes that makes healthy eating feel easy — and honestly, exciting again. Thinly sliced zucchini replaces traditional carbs, then gets layered with protein, herbs, and melty cheese for a casserole that’s rich, savory, and deeply satisfying without spiking blood sugar.

It’s perfect for weeknight dinners, meal prep, or when you want comfort food that still loves you back.

Ingredients

  • 4 medium zucchini, thinly sliced
  • 1 lb ground chicken or turkey (or lean ground beef)
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • ½ cup ricotta or cottage cheese
  • 2 cloves garlic, minced
  • ½ small onion, finely diced
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • Salt and black pepper, to taste
  • 1 tbsp olive oil
  • Fresh basil or parsley, for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Heat olive oil in a skillet over medium heat. Sauté onion until soft, then add garlic.
  3. Add ground meat, Italian seasoning, paprika, salt, and pepper. Cook until browned.
  4. Pat zucchini slices dry with a paper towel to remove excess moisture.
  5. Layer half the zucchini in the baking dish.
  6. Spread the meat mixture evenly over zucchini.
  7. Dollop ricotta or cottage cheese on top, then sprinkle with half the shredded cheese.
  8. Add remaining zucchini and top with remaining cheese.
  9. Cover loosely with foil and bake 30 minutes.
  10. Uncover and bake an additional 10–15 minutes until bubbly and lightly golden.
  11. Rest 10 minutes before slicing. Garnish with fresh herbs.

Tips for the Best Zucchini Bake

  • Dry the zucchini well — this prevents a watery casserole.
  • Use full-fat cheese for better flavor and blood sugar stability.
  • Let it rest before slicing so layers hold together.
  • Add mushrooms or spinach for extra veggies.
  • Tastes even better the next day.
