Lemon & Garlic Chicken Bites (Diabetic-Friendly + Low Carb!)
Crispy on the outside, juicy on the inside, and swimming in a bright buttery lemon-garlic sauce—this dish is the kind of simple, flavorful weeknight dinner that feels restaurant-fancy without any work. And yes… it’s completely diabetic-friendly and low-carb!
Perfect over cauliflower rice, salad, steamed veggies, or eaten straight from the pan (no judgment here 😁).
📝 Ingredients
For the Chicken:
- 1 ½ lbs boneless chicken breast or thighs, cut into bite-sized pieces
- 2 tbsp olive oil (or avocado oil)
- 2 tbsp butter
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 ½ tsp Italian seasoning
- Salt & pepper to taste
- 2 tbsp almond flour optional — helps create browning without carbs
For the Lemon Garlic Sauce:
- 3–4 cloves garlic, minced
- Juice of 1 lemon
- Zest of ½ lemon
- 2 tbsp butter
- ¼ cup chicken broth (low sodium)
- 1 tbsp chopped parsley
- Lemon slices for garnish
👩🍳 Instructions
1️⃣ Season the chicken
In a bowl, toss chicken with:
- garlic powder
- onion powder
- Italian seasoning
- salt & pepper
- almond flour (optional but gives a beautiful golden crust)
2️⃣ Sear to golden perfection
Heat olive oil + 1 tbsp butter in a skillet over medium-high.
Add chicken bites in a single layer. Cook 3–4 minutes per side until browned and cooked through. Remove and set aside.
3️⃣ Build the lemon garlic sauce
In the same skillet, add:
- minced garlic → sauté 30 seconds
- chicken broth
- lemon juice + zest
Simmer 2 minutes. Stir in the remaining 1 tbsp butter until glossy.
4️⃣ Combine & finish
Add chicken back to the pan and coat in the sauce.
Top with parsley and lemon slices.
Serve hot!
