- 1 lb (450 g) boneless, skinless chicken breast, cubed
- 2 cups fresh spinach (or 1 cup frozen, thawed & drained)
- 1 cup canned artichoke hearts, chopped
- 1 cup plain Greek yogurt (non-fat or 2%)
- ½ cup light cream cheese, softened
- ½ cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- ½ tsp black pepper
- ½ tsp salt (optional)
- ½ tsp dried basil or Italian seasoning
