  • 1 lb (450 g) boneless, skinless chicken breast, cubed
  • 2 cups fresh spinach (or 1 cup frozen, thawed & drained)
  • 1 cup canned artichoke hearts, chopped
  • 1 cup plain Greek yogurt (non-fat or 2%)
  • ½ cup light cream cheese, softened
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • ½ tsp black pepper
  • ½ tsp salt (optional)
  • ½ tsp dried basil or Italian seasoning

  1. Preheat oven to 375°F (190°C).
