Ingredients

  • 1½ lbs boneless, skinless chicken breast, cut into chunks
  • 1 tbsp olive oil
  • 1 tbsp butter (optional for flavor)
  • 1 green bell pepper, sliced
  • 1 cup mushrooms, sliced
  • ½ medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • ½ tsp black pepper

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken pieces and season with salt, pepper, paprika, and Italian seasoning.
  3. Cook 6–8 minutes until browned and cooked through. Remove and set aside.
  4. In the same skillet, add butter (if using), mushrooms, peppers, and onions.
  5. Sauté 4–5 minutes until tender.
