This super easy blender dessert is creamy, lightly sweet, and perfect when you want something quick without turning on the oven. Just blend, heat, and chill — that’s it!
🥘 Ingredients (Serves 4–6)
- 2 cups milk (or unsweetened almond milk for lower carbs)
- 2 eggs
- ¼ cup powdered sweetener (erythritol or monk fruit)
- 1 tsp vanilla extract
- 1 tbsp butter
- 1 tbsp cornstarch (optional – for thicker texture)
- 2 tbsp raisins (optional – can skip for lower carbs)
👩🍳 Instructions
1️⃣ Blend Everything
Add to blender:
- Milk
- Eggs
- Sweetener
- Vanilla
- Butter
- Cornstarch (if using)
Blend until smooth.
2️⃣ Cook the Mixture
Pour into a saucepan and cook on medium heat, stirring constantly until it thickens (about 5–7 minutes).
3️⃣ Add Extras
Stir in raisins (optional).
4️⃣ Chill
Pour into cups and refrigerate for 1–2 hours until set.
