🛒 Ingredients

For the Cake:

  • 2 cups almond flour
  • ¼ cup unsweetened cocoa powder
  • ½ cup allulose or monk fruit sweetener
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • ½ cup unsalted butter, melted
  • ½ cup unsweetened almond milk
  • 2 tsp vanilla extract

For the Chocolate Icing:

  • ½ cup heavy cream
  • 3 tbsp butter
  • ½ cup sugar-free chocolate chips (Lily’s, ChocZero, etc.)
  • 1 tsp vanilla
  • Pinch of salt
  • Optional topping: pecans, chopped or halved (as shown!)

👩‍🍳 Instructions

1️⃣ Preheat & Prep

Heat oven to 350°F (180°C).
Grease or line a 9×13 baking pan.


2️⃣ Make the Cake Batter

In a large bowl, whisk together:
✔ almond flour
✔ cocoa powder
✔ sweetener
✔ baking powder
✔ baking soda
✔ salt

In another bowl, mix:
✔ melted butter
✔ eggs
✔ almond milk
✔ vanilla

Combine wet + dry until smooth. The batter will be thick — that’s perfect.


3️⃣ Bake

Pour into the pan, smooth the top, and bake for 18–22 minutes.
The cake should be set but still soft — do NOT overbake.

Let it cool slightly while you make the icing.


4️⃣ Make the Glossy Chocolate Icing

In a saucepan over low heat:
Melt together butter + heavy cream.
Stir in sugar-free chocolate chips, blending until smooth and shiny.
Add a pinch of salt + vanilla.

Pour the warm glossy icing over the warm cake.


5️⃣ Add Pecans (Optional but heavenly)

Sprinkle pecan halves or chopped pecans on top.
Let everything set for at least 20–30 minutes.
