🧾 Ingredients

Base

  • 12 oz kielbasa, sliced into rounds (choose low-sugar, low-carb sausage)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp butter or olive oil

Vegetables

  • 1 medium head cauliflower, chopped into bite-sized pieces
  • 1 cup celery, diced
  • Optional: 1 small carrot, finely diced (adds flavor but still low-carb in moderation)

Soup Base

  • 4 cups chicken broth
  • ½ cup heavy cream
  • ½ cup unsweetened almond milk or half & half
  • ½ tsp smoked paprika
  • Salt & pepper to taste

Thickening (Low-Carb)

  • 2–3 oz cream cheese
    OR
  • 1 tsp xanthan gum

Toppings

  • Fresh chives
  • Black pepper

🍳 Instructions

1. Sauté the Kielbasa

In a large pot, brown the sliced kielbasa in butter or oil.
Remove and set aside, leaving the flavored drippings in the pot.

2. Cook the Aromatics

Add onion, celery, and garlic.
Sauté until fragrant and softened.

3. Add Cauliflower & Broth

Stir in the cauliflower.
Pour in chicken broth and smoked paprika.
Simmer 12–15 minutes, until cauliflower is tender.

4. Make It Creamy

Add heavy cream + almond milk.
Stir in cream cheese until melted and smooth.
(Or sprinkle xanthan gum and whisk until thickened.)

5. Add Kielbasa Back In

Let everything simmer together for 5 minutes so flavors blend.

6. Season & Serve

Taste and add salt, pepper, and extra spices if desired.
Top with chives or more cracked pepper.
